That's not all there is to Chaotic/Evil. That is a gross oversimplification on your part, the sort that d20 players refer to as "Stupid Evil" or "Chaotic Stupid" depending on the iteration.
Riddick for instance from the Pitch Black series is an example of a C/E protagonist. Guts from Berserks starts as a C/E protagonist as well (who arguably falls back into it overtime). There's many others out there too that aren't all about fire and brimstone within their alignment niche.

We settled on a mid ground of L/N with evil tendencies. While I independently hold onto my notion of being L/E with her bias being that I act differently around her than other people, that is the answer that was put onto the list. I'm not quite as far over on that end of the spectrum as I used to be at least.

Self discovery isn't exactly instantaneous, and the way you're typing about it is as if she still held onto it being as strongly believed the case as it once was. Even I from the whole shallow emotions thing once thought I fell onto the sociopath spectrum before exploring everything else a little further.

There is a range within these 9 types. You may be thinking of Stupid Evil.
Within TVTropes definition of it, there's five defined subtypes. Beyond that there's always the potential for more.

Your perspective on what constitutes C/E is super limited. It's like you didn't even read what she typed.
C/E is capable of self-sacrifice. To throw this example out again, Riddick. Seriously, read the types and get out of your own head for a second, as how far in your own head that you are is a large factor of why "evil" was picked. Everything you read is about you, and those connected to you still strike me as being seen as a part of you.
In that way I'm not any different, really. I have many attachments and might sacrifice myself if the situation called for it, but they're all about me, how those things affect me, what I care about.

Evil can have the most feeling. The Star Wars series focuses pretty hard on how "The Dark Side" tends to be the most emotional.

So can "evil" people. Someone without a full range of human emotion and empathy could probably be "good" from within the right circumstances too.
So much black and white thinking... Alignment has so much more potential than what you're granting it.

So far her killing has all been in self defense or to protect children who can't protect themselves. She let the Hound suffer when she could have put him down. Do you see that as evil?
