If you find yourself in a situation where you must eat human flesh, that is NOT the way to do it. First of all, bleeding meat is just a matter of convenience. If you feel the need to bleed it, hang it by its feet and bleed it from the neck. Passive bleeding is good enough and blood can safely be consumed when cooked.
But first of all you want to wash your carcass. People rarely die without defecating (Same with animals).
Then, absolutely no decapitating. You don't even want to cut the spinal cord. You must cut our the meat around it, even if it takes more energy than cut through bone. This is a same species thing, you want food, not a prion disease.
Step three is gutting. You cut carefully because you do not want to nick the intestines and infect your meat with fecal matter. You can make a gut incision and carefully pull out the guts and the stomach. You can either cut the bowel near the rectum or cut all the way down (up in reality since the body hangs upside down) and get the bowel out whole.
Opening the gut will cause a very strong and unpleasant odor. After you removed the stomach and bowels and discarded of them safely you wash and continue the same incision to get the liver and heart. If you are in starvation mood, innards is what you really want and you want to consume first. You also save the kidneys for that. When you feasted on those you might want to take a nap and get your strength back.
Then you remove muscle tissue for meat. There is no right or wrong way doing this, and you do it differently depending on the tools you have. If you only have a knife, you simply cut around the bones.
If you plan to store meat for a longer time and do not have access to modern methods, you can slice and dry meat in front of a fire. It should never be cooked (then you have to consume it within a few days) but just dry as a sole. You dry the lean meat, fatty parts is for quicker consumption since fat cannot be stored well without methods like smoking, which actually is harder than you may think.
Of course you do all this outdoors. If someone finds you, they are probably starving too so invite them for a meal.

Believe me, if I'm ever in a situation where I must eat human flesh to survive, I'm not going to give two shits which way is better to cut up the body. How it's cut up won't bother me either way.
I've thought about cannibalism, but it doesn't really interest me outside of a survival situation, and not because of any bullshit moral reasons. I just don't want to end up with some dirty fucking disease that I could have avoided by not eating the body.
