 There actually is a reason that no one eats human meat and that reason is indeed infection. The thing about parasites and bacteria which live in animal flesh is that they are usually specific to their host. When animals we consume do develop something that could live in humans we get things like mad cow disease and bird flu. 

Quite recently (somewhere in the last 200 years) an cannibalistic village in Africa wiped out completely because they all got infected with some freaking brain parasite which was apparantly living in one of their meals.

 I wouldn't mind tasting some longpork someday though. If I ever had to have a limb removed because of some accident I would find a way to take a bit of it home with me.
