 But I am a shameless foodie. I very rarely eat anything processed. I love to cook and bake, so most of what I consume is home-made and consists of wholesome ingredients. 

 Much the same for me, i love good food too much to eat processed. (Well, that aside the odd frozen quiche or pizza from Aldi, which i like lots.)

Except for the "toddler" portions - i have a freakishly fast metabolism, so despite my gargantuan food-consumption i'm still on the underweight verge of 'normal' (was positively underweight until 4-5 years ago - the lazy rural lifestyle + middle-age got me padded out a bit lately).  But frankly, i would rather go fat any day than compromise on taste.

Uh, I'm not sure how you managed to interpret 7 or 8 servings of grain as "two slices of bread", but yeah. My metabolism is rather sluggish. To maintain my weight, which is smack in the middle of the healthy BMI range for someone my height, I cannot consume more than 1000 calories a day. To lose weight, I need to drop the total to 700. But on the upside, I do build up muscle mass rather quickly. My arms are kind of ripped at this point, as in nicely toned and defined- not bulky. I don't want to be skinny and weak; I want to be strong. I do a lot of extreme sports, so that strength is essential for me. Also, cow's milk disgusts me. Humans are the only mammals to drink the milk of another species, right though to adulthood. It's gross. :P

LOLs. I'm getting a blood test for hypothyroidism next week. Lately if I look a picture of a carb I gain weight.
