A very underestimated, lean and tasty meat is rabbit. The longer its hung (stop it) ...the stronger the flavour, as with hare. could never really bring myself to eat jugged hare though, just a bit too much for my tastes.
Ha! My father brought it over for dinner and got pissed when certain people sitting around the table were offended by the prospect of eating a 'fuzzy bunny". It was funny.
I am the only person in my household who can butcher meat properly. :P

go figure ..."fuzzy bunny" as opposed to "fluffly the sheep" ...and "Moosey the cow". If its meat, it'll sizzle in a fry pan ...the end :-) (well , having crackling is a bonus)

Wellll.... Yeah. But it was already skinned. The whole affair was very civilized and tasteful, I can assure you. :) We prepared it with mustard and tarragon. It was delicious.
