We're supposed to either support carbon taxes, or be indifferent toward it. 

No you're just making a ton of presumptions. I think a carbon tax only for meat and private jets would be good. I think meat should be super expensive.

If we started eating less meat, the population of living beef would explode and your new solution would be to terminate some animals and let the creatures in the soil consume them.

 Sure they'll die, but nope. They'll be in great numbers and will still breed and continue to increase in population. Farting up the place causing more carbon emissions.

 Yes, cause we eat them. 

If we stop eating them they would still have a vast population and carry on from there. 

The problem climate change activists have with meat, is the number of livestock. 

The number is so high because cows depend on people to breed them and there needs to be a demand. Including introducing new mates, and manual inseminations.
