Chocolate, jam, fruits, sugar, honey, marmalade, hot cheese, lemon, milk, pudding, yogurt, meat or perhaps something else? :P
I'm more of a crepes person.
I usually stuff them with soft white cheese mixed with various nuts, raisins, honey and fresh fruits (blueberries, strawberries, raspberries, blackberries, mango etc...). With a touch of sour cram on top of nutella, maple syrup, or pine syrup.
To die for.
The other option is to stuff them with ground meat (preferably lamb, or veal), mushrooms and sour cabbage.
I'm a crêpe person too. (In fact i didn't know the English type pancake until lately.)
I like it with all of the things above, also the basic versions: sprinkled with Saigon cinnamon + light brown sugar, or with freshly squeezed lemon and caster sugar.

I fry crêpes very thin, used to toss them up mid-air to turn them around but not anymore (my current cast iron pan is way too heavy for that).
Same. I butter mine on both sides and use maple syrup when I have a little extra money (It's $14/ litre here.) If I'm poor I use the $3/litre Aunt Jemima butter flavoured syrup. I never scrimp on my butter, tho. Idc how poor we are. I hate margarine.
If I'm doing smthg special for the kids I'll add blueberries, strawberries or chocolate chips and add a scoop of vanilla ice cream.
I've never tried cooking crepes myself. That's restaurant food. We only get that stuff 5 or 6 times/ year.
I might try it some time if I have $5 or $10 and a few hours to throw away on the chance that I won't get it right the first time.
