I find it hard to believe you have a Pikachu Illustrator card.
How can I prove it?
You probably couldn't. I'd think it was a remake or counterfeit. How would you have gotten it in the first place ?
It seems very legit. There is a material on the front of the card that feels exactly identical to a small part of another card I have.
Some light reading suggests there are 39 authentic Pikachu Illustrator cards. They were originally handed out to some Illustration contest winners in 1997, around the time Pokemon went mainstream I suppose.
I don't know much about Pokemon, but I know about that card. If you have "thee" Pikachu Illustrator your asking price is way too low. Why are you asking for a measly 80k ?
It’s not graded, not completely mint condition, everybody thinks it might be fake because of the Logan Paul thing, and I don’t have 100 million items sold on eBay.
I'd look into finding someone who can authenticate it, then if it's good you can turn to someone who can auction it off.

Before Logan paid $5,275,000 I believe the previous record for the Pikachu Illustrator was 4 million. If there's a black lining between the glued faces of the card, then you might actually have something.
