I understand that you miss how I used to behave and that you think I am insane, but you could also take into consideration that I have probably a lot of reasons for believing what I do and that since you're not me, you don't truly know all of the reasons why I am convinced of what I am convinced of currently

and maybe if you were me and you had experienced everything I have experienced firsthand, you would believe what I believe about myself too

She's trying to have Jesus be her guard dog while laying sole claim to him as her husband. She's aware that Nuns are 'The Brides of Christ' now, and since then hasn't been as pushy about being possessive (until challenged apparently). 

For a while she thought she was equal to God, too, but that was dispelled with some time and Bible passages.

She's on medications that have made it spiral further out of control than how it was prior, and I swear she gets seizures or something because she straight up talks about having visions. 

There's otherwise some clear God Complex coping going on, it's how she responds when she feels cornered. What makes now interesting is that she's aiming to seek protection from a religious path that emphasizes being humble, which works entirely against the nature of her complex.
