I have tried smoothies and he does about three sips... texture... sensory issues. Same with the crisps... likes soft squishy. However, he eats fries? Soft middle? The veggie breads might not be a bad idea with the chocolate twst. I'll give the smoothies one more go too... thanks again.

This is prolly the worst place on the net to come for parenting advice.
I'd offer to help you, but I know that the minute my post goes up, the same 8 or so assholes who have been jacking all the threads for months will swoop in and turn this thread into a trainwreck to try to undermine my credibility.
Not sure how much effect they have on your perceptions of me, but I'm too busy for their bullshit right now. Just don't take any advice from any of the assholes you see following me around this forum saying stupid shit about my kids on a regular basis bc not a damn one of them actually has kids of their own. Your question is important, tho. I can offer you some advice privately later.
In the meantime, these people can help you. Just read the rules before you post, and converse with them the way you would converse with your churchy relatives. Use good manners.
I hate flavors and only want bread when I am on meds that suppress appetite. Is he on meds?
In general I hear kids have more basic taste in food so they go with what is familiar and does not have many flavors. It could be masked poison if there is too many tastes or new flavors. It is best to blend things together... The child likes bread? Try cheesy bread (not a big jump)! Then try pizza! Try bagel cream cheese! Try cheese and crackers! Try crackers and cream cheese!

My 7 year old is slightly autistic, close to what we call Asperger's... kid will not eat anything but breads (pasta) and fried potato! I have tried everything. Any personal experiences that might help? Fourth kid and he IS the most work, God I love that little dude! But every morning we have a battle to not eat pasta or fries! Anything... different bread source like a pancake, or maybe slip a grilled cheese in there. Once in a great while I coax him into a PBJ, crazy... stubborn youngman!
Breads and fried potatoes are a terrible diet for a kid. Don't ignore this issue because it's easier to give into the kid's wishes.
Why does the kid eat just that? Has he tried different things and doesn't like them, or doesn't even want to try? If he is a bit autistic, maybe he just doesn't like change. I heard that autistic people get attached to routine and familiar stuff. If the issue is psychological try to get him into therapy.
If the kid doesn't want to understand that eating only bread and potatoes will make him sick, I'd try the reward or penalty approach: find smth he likes and promise it to him if he eats smth different (Eat this cheese/tomato/whatever and I will take you see this movie, or we will play smth, or I will buy you smth). Find smth he dislikes, and make it happen if he refuses to eat smth else. The internet is usually a good handle, but also forbidding him all kinds of activities, depriving him of his hobbies or toys he cares about, etc. Involve other members of your family too, his mother and brothers, who hopefully understand they need to help. If the kid is very stubborn you are in for a lot of work, but don't give up on him imo. He's your and your wife's responsibility.
