Anybody have a good recipe for a whole stuffed roast chicken? Mainly looking for a good stuffing recipe.

 

 

 

Summer Squash Casserole:

1lb summer squash, sliced (fresh or frozen)

1/2 medium white onion

1 clove garlic, smashed

1/4 stick butter 

dash of olive oil

salt and pepper to taste

Melt butter in skillet on lowest heat. Add onion, garlic, salt, and pepper allow to simmer for 2 minutes while stirring. Add squash. Cook until squash is tender.

1/4 package cream cheese (4oz) cubed

1/2 cup sour cream

1.5 cups shredded cheddar cheese

1 egg (optional)

1tbsp flour

Mix cream cheese, sour cream, and cheddar in a bowl. Pour in squash mixture and fold until cream cheese and cheddar melt. Stir in flour, then egg if desired.  Dump into casserole dish.

Sprinkle top with bread or cracker crumbs and dried basil.

Bake on 400F until stiff and golden.

When I roast a chicken I empty the cavity and save the giblets and livers for stock.  Heavily season the inside with kosher salt and pepper, then stuff the cavity with garlic, onion, ginger root, and fruits (lemon, lime, and/or orange for citrus and a plum or mashed berries for sweet).  I then rub the chicken with kosher salt, pepper, sage, onion powder, garlic powder, thyme, and a little oregano.  Roast in a pan with a cup of water, carrots, onions, and celery at 375F until center is 165F and juices run clear.

Take remaining liquid and add two times amount water and the giblets livers (chicken carcass is optional, but does increase flavor).  Reduce down 2/3.  Skim fat periodically.  Strain and store for chicken stock.

Stuff it with a woodcock stuffed with a quail stuffed with a partridge stuffed with the quail's egg. 

 

(Aka the last four steps taken out of the How To Stuff A Wild Boar recipe.)

 

Season well.
