For the why, because they're pretentious dicks a lot of the time. Also it really bugs me that whenever they're right, they know they're right, and that when they're in the wrong they act like they're right anyway.
For the how, I was thinking use a shotgun or scattergun, or smth else that fires multiple projectiles per trigger pull. Jedi have shown time and time again their broken ability to deflect laser beams and bullets and shit. I even remember a scene in the clone wars 2d movie where Mace Windu deflects two ground to air laser beams. Like, a laser beam for demolishing spaceships the size of my apartment building. Two of them at once continuously for like 5 fuckin seconds. He even steered the beams individually back into their respective shooters, as if he wasn't op enough. That said, it would be tough/impossible to deflect like 16-20 pellets simultaneously, even for a jedi. After all, since a lightsaber is a linear beam, it can't be at more than two non points, unless the points are linear. And since a shotgun typically fires in a clump pattern, it would be physically impossible for the lightsaber beam to intercept every pellet simultaneously. And then of course there's always the possibility of surprise, even the rather meager clone troopers could kill off a lot of jedi with the element of surprise. Although sometimes the jedi use their force-plot armor to be all like 'I happened to see the future and now I can sense your presence because fuck you!'
