Scenario 1: Wait, what? Why would I attack her? What in that scenario suggests I ought to, and how is she "prepared" for it?
Scenario 2: I'd be too worried about a Pimp, regular customers, or other potential people who might be keeping tabs on her.
Scenario 3: I'd get it in writing, something that could outlast their mortality with a signature.
Scenario 4: I'd probably arrange for someone else to do the meeting.
If I were an "actual serial killer", I'd not be so damn social. The victims would be random in places with plenty of potential suspects. If the goal was to have people die, I'd focus more on the results more than "the hunt" itself, since by the end of it all what else is there other than results?

Let's assume you get a feeling of pleasure and power from killing people. She's ideal because she's alone and it's an opportunity that you just can't resist. Do you really need an excuse to attack her, other then enjoying the kill?
Let's just say she was carrying pepper spray, tried to use it, but missed the target. This surprised her and that moment was the perfect time to over-power her.

Hunting can be a pleasurable experience. Watching all that potential prey awakens a primitive hunger inside, a hunger that needs to be fed.

I'm assuming you're meaning after an attack as opposed to pepper spraying unprovoked (could be argued as self defense at that point otherwise).
I'd ideally aim to disarm the pepper spray and use it on her if I were the assailant (there would be a certain sense of joy of using what was meant for me), but I wouldn't imagine myself being that sort of mentally coordinated in a scenario of force. I'd probably just use brute force as opposed to something so movie-like if it wasn't something I could meticulously pre-plan.

I guess I do enjoy the stealth aspect in games at least, but that ends up being about "the hunt" itself as opposed to the outcome. If it's about the outcome, I wouldn't be focusing on the dramatics, since that would likely risk the outcome's likelihood of success.
