Cuz they taste mighty good, that's why. Frying up some chicken livers tonight.
Wild duck tongues in a forest mushroom sauce was one of the best meals i had in the past few years. Piglet brains spread on a lightly garlicky toast - perfect elevenses. Never tried testicles tho, but i guess they're good as well if made well.
