The earliest portions of the bible were written around 950 BCE, and the last of the New Testament was written around 130 CE. In the Near East, the bronze age collapsed by the early 10th century BCE, and the early iron age was underway.
The old testament is bronze age, since it is derived from older, Babylonian and Mesopotamian, myths. The superstitions are bronze age, even if the text wasn't written until the early iron age.
Plus, "bronze age fantasy novel" just rolls off the tongue better than "iron age fantasy novel".
