So, you can know our passwords. I mean, the exact words. They're not encrypted in a way you can't access them.

 You can restore encrypted backups.  They need not know your actual password to do so.  I can't say that is what they did, but it is certainly possible, and not at all uncommon.  (Luna has already said that's what they did.)

 He just restored them from back up. They are still encrypted. All he does is restore the account to it's previous condition.
