Stems of broccoli, ends of peppers, extra bits of onion- scraps like these often go o waste, that's money spent literally being thrown out. Saving veggie scraps in a bag in the freezer is a great way to cut down on waste and make a low ccost meal.
Tonight's "poor people soup" as I like to joking call it: Veggie cheddar chowder.
I had 1 large leek left over from last week's Tonkatsu Ramen. I thoroughly cleaned and roughly chopped this, and let it simmer on medium heat with 3 roughly chopped garlic cloves, and 5 whole peppercorns for 3.5 hours this after noon.
Out of the freezer i took 1 whole broccoli stem, and the ends of 4 red and orange peppers. I roughly chopped these together. Next I strained the plant material out out of my onion broth, and added the chopped veggies along with half a bag of frozen peas and carrots and brought to a simmer.
I added 1/2 tsp each of the following: paprika, ground mustard, cumin, corriander, and a dash of cyanne. Simmered for ~20 minutes. My veggies are now tender, and it is time to puree to make my chowder base.
