I think Demon is more of an overall term, like Mammal, while Fallen Angels were among those who found themselves becoming demons. 

Demonic traits refer to that of becoming more like a Beast, noting them for horns and hooves while they play into the instincts of the natural world. In many cases that which was manmade has also been called either Demonic or Satanic, like music and medicine, so after a point you're left with very little that isn't a corruption of some kind.
