I think it ends up being like 6 hours of my week and that is like 75% of the potatoes we cut at the store and we are very busy. Five Guys has a high standard for potatoes and we rarely have to throw any away because they are too old to sell.

I disagree, I think he shoots low and aims high within those constraints from otherwise fearing himself as being disposable. He's somehow come under the impression that the speed of his work is how he survives, so now he's obsessed with it.
