Meals to pre-prep and freeze for easy dinners

Buying fresh ingredients is the healthiest, most cost effective way to grocery shop, but sometimes leftover fresh produce can go bad if you only bought it for one recipe. Pre-preparing and freezing meals is a great way to buy a bunch if ingredients at once and alot them to a meal before they go bad. Just chop all the ingredients up, put them in a ziplock freezer bag, and when the time comes, simply dump the contents into a crock pot, instant pot, or on the stove for a quick and hassle-free dinner! For most recipes you can alter amounts of ingredients to preference, amounts I have listed below are sized for 2 people to eat with possible leftovers.

Recommended cooking method key:

IP- Instant Pot

CP- Crock Pot

ST- Stove

Here are the recipes I've made so far in the last 2 days:

  1. Samhain Hash:  1 small onion, garlic, 2 potatoes, rosemary, sage, 1 lb ground beef, 2/3 cup heavy cream, 3 tbs worchesterschire sauce. IP on meat setting
  2. Pumpkin Honey Glazed Chicken: 1/4 medium onion, garlic, sage, parsley, 1 large chicken breast, 1/3 cup honey, 1/4 cup soy sauce, 1/3 cup pumpkin syrup or other sweet liquid (less viscous than honey), 1/4 roasted small pumpkin. IP meat setting, serve over rice
  3. Chicken Soup for the Sociopath's Soul: 1 small onion, garlic, celery, carrot, parsley, thyme, 1 large chicken breast. CP, add rice and broth to cook
  4.  Roast Beef Stew Ground Beef Stew: 1 onion, garlic, potato, carrot, rosemary, thyme, 1 lbs ground beef, 1/2 cup masala cooking wine, 1/2 cup apple cider or juice. CP, add broth to cook
  5. Lentil Soup: Onion, celery, carrot, parsley. CP, add broth and lentils to cook. 5 min before serving add kale or spinach and continue cooking until wilted. Add 1-2 tbs lemon juice immediately before serving. CP or ST
  6. Ginger Leek Soup: 1 whole leek, 4 tbs ginger, garlic, 4 oz mushrooms. CP or ST, add broth and rice noodles to cook.
  7. Broccoli Red Pepper Chowder: 3 potate, 1 onion, broccoli, 1 red pepper, garlic. Thaw before cooking. ST, sautee frozen veggies with 2 tbs flour, 1/4 tbs cyanne pepper, 1/2 tps chilli powder, & 1/2 tsp ground white pepper. When soft add broth, then 1/2 cup milk, then melt cheese into it.

I've more frozen recipes to come

Of course there was something involving pumpkin.

Where do you get your cooking ideas from? They seem pretty thought-out.

I used to look up recipies for every meal but after a few years of practice I've gotten good at remember what flavors work well together and what ratios of ingredients work best. The Samhain Hash is the only recipe on this list I didnt come up with myself, but I did tweak it some (the herbs& garlic werent in original recipe)

 Thanks, it wasn't bad :)

The rice got kinda mushy so in hindsight I should have added it near the end if cooking, but the chicken and veggies were good and it waa nice and healthy :)
