I haven't tried much of it, but I have tried octopus itself cooked a few times.
They're kinda like rubbery hotdogs, but with more of a means of absorbing sauces.
There is controversy around it because apparently, octopi have as many neurons as dogs and thus, definitely feel pain.
There will always be PETA concerns, I'm more curious about if the taste is worth it or if it's purely being done just for show.

I'm personally more interested in people's moral complications about this simply because I find raw seafood disgusting. My culture overcooks everything, so I'm not used to anything rare much less raw. I tried a medium-rare steak some time ago for the first time and the better taste was noticeable but the texture I couldn't get over tbh. I'm barely a fan of cooked seafood; can't imagine it raw.
