Date honest people who "can't live with the guilt", they have terrible poker faces that leave less to mystery from both you and themselves.
For real, people are shit at hiding things, and if they're not they're typically shit at hiding that. If they're used to being seen through or understood they'll also find it harder to hide things from expecting it to be noticed.
Most of the time, I see people not spotting it from some sort of sunken cost, thirst, or glaring social flaw giving them reason to not want to (it becomes more glaringly obvious when they observe other people's problems). People with experience with real conversations of depth tend to have a better time sniffing out patterns, like a passive form of cross-training.
It's as easy as making it about them instead of yourself.

Offer them something of depth and quality and they won't grow tired of it as quickly. People stick to their favorite foods, and if they just crave fast food then they aren't worth it.
Be a delicacy, not something anyone could find on the shelves.
